Coconut Cookies

Ingredients:

All purpose flour – 1 1/4 cup
Coconut flakes – 1 1/4 cup
Brown sugar – 1/2 cup
Sugar – 1/2 cup
Egg – 1 (room temperature)
Unsalted Butter – 1/2 cup ( room temperature)
Baking soda – 1/2 tsp
Vanilla extract – 1/2 tsp
Salt – 1/4 tsp

Method:

  • Preheat oven to 350 degrees.
  • In a  bowl add  flour, baking soda, salt and  mix everything together.
  • Using a mixer cream the butter, brown sugar, and white sugar until smooth.
  • Add the egg ,vanilla and beat until light and fluffy.
  • Gradually add  the flour mixture and the coconut.
  • Drop dough by teaspoonfuls onto an parchment lined cookie sheet. 
  • Bake for 10 to 12 minutes in the preheated oven.
  • Serve coconut cookies with cold milk….

 

 

Pizza Balls

Ingredients:

Pizza Dough  – 1 Pack (room temperature)
Mozzarella Cheese – 1 cup (shredded)
Onion – Sliced (1/2 of 1 onion )
Chicken (cooked) – 1/2 Cup (Shredded)
Potato – 1 (boiled and mashed)
Turmeric powder – 1/4 tsp
Chilli powder – 1/ 4 tsp
Green chillies – 3 (Chopped)
Ginger – 1/2 piece (chopped)
Garlic – 2 cloves (chopped)
Garam Masala – 1/4 tsp
Salt – as needed
Oil – As requiired
Method:

  • Preheat oven to 425 deg F.
  • In a pan heat oil and add sliced onion,ginger ,garlic,green chillies  and saute until the onions become soft.
  • Add the turmeric powder,red chilli powder,salt,garam masala and saute for 1 minute.
  • Now add the shredded chicken and mashed potatoes into it and mix well.
  • Check for salt if needed add at this stage.
  • Turn off  heat.
  • Roll the pizza dough and make a square shape.
  • Cut into 12 to 16 equal parts.
  • In a bowl add the cooked masala and cheese and mix well.
  • Take one piece of dough and stretch it with hand and fill them with 1 spoon of masala and close it make a ball.
  • Take a pie plate and grease them with oil.
  • Place the pizza balls and brush them with olive oil.
  • Bake them around 20-25 minutes or until they are done.
  • Take out and serve.

Note:

  • You can make your favorite willing for this.
  • You can use 1/2 cup of pizza sauce ,1 cup mozzarella cheese,brocoli  mix them .
  • You can fill the pizza dough with this filling and bake it.

Butter Cake

Butter Cake
Ingredients:

All purpose flour – 3/4 cup
Unsalted Butter – 125 gm
Milk – 2 tbsp
Eggs – 2
Sugar – 1/2 cup
Vanilla extract – 1 tsp
Baking powder – 1 tsp
Salt – 1/4 tsp

Method:

  • Preheat oven to 350 deg F.
  • Butter or line with a parchment/butter paper the tray and keep aside.
  • Beat butter and sugar until pale and creamy.
  • In another bowl sift together flour,salt and baking powder.
  • Add one egg at a time to the butter and sugar mixer and beat well in each addition.
  • Add vanilla extract and mix well.
  • Add flour and milk in 2 or 3 addition and mix well (Use spatula for this).
  • Pour the batter into the prepared pan and bake it for 30-35 minute or until a tooth pick inserted come out clean.
  • Let it cool down for 15-20 minute before serving.
  • Your Butter cake is now ready…

 

Candy Cane Cookies

Ingredients:

All purpose flour – 2 1/2 cup
Unsalted butter – 1 cup (room temperature)
Powdered Sugar – 1 cup
Egg yolk – 2
Vanilla Extract – 1 tsp
Almond extract – 1/2 tsp
Red food color – As required
Salt – 1/4 tsp (if you are using salted butter then leave 1/4 tsp salt)

Method:

  • Using a electric mixer beat butter and sugar until creamy.
  • Add the egg yolk ,vanilla extract,almond extract and beat until well combined.
  • In a bowl whisk together salt and flour.
  • Add this flour to the egg mixer 2- 3 addition.
  • Mix until you get a smooth dough.(you can use your hand to knead the dough).
  • Remove half of the dough and apply the red color and knead well .
  • With each color dough make gooseberry size ball and roll with hand.(if the dough is breaking then the dough is too soft .Then keep it in the fridge for 15 minute.take out and try to make roll. )
  • Place both rope side by side and gently press together.
  • Twist the two ropes to form a spiral.
  • Place these on a cookie sheet.
  • Shape each cookie into a cane shape by bending one end into a hook shape.(If you find the cookies a little soft, place the baking sheet (with the unbaked cookies) in the refrigerator for about 15 minutes before baking.)

  • Preheat oven to 375 deg F.
  • Place the rack on center of the oven and bake for 8-10 minute or until set and the edges of the cookies are just starting to brown.(do not over bake).
  • Remove from the oven and let it cool down completely.

White Chocolate Chip Cookies

Ingredients:

All Purpose Flour – 2  1/4 cup
Unsalted Butter – 1 cup
White Sugar – 3/4 cup
Brown sugar – 3/4 cup
Eggs – 2
Baking soda – 1 tsp
Pure vanilla extract – 1 tsp
Salt – 1/2 tsp
Chocolate chip – 1 1/2 cup (semi sweet)

Preparation:

  • Preheat oven to 375 degree F.
  • Using a electric mixer beat butter until smooth.
  • Add white and brown sugar and mix until fluffy.
  • Add one egg at a time and beat well.
  • Add the vanilla extract and mix.
  • In bowl swift together all purpose flour,baking soda and salt.
  • Add this flour mixture to the egg mixture and beat until incorporated.
  • Add the chocolate chips and mix.
  • If  the batter is soft cover it with plastic wrap and keep it in refrigerated until firm( 30 – 1 hr).
  • Use  a small  ice cream scoop or with two spoons, drop about 2 tablespoons of dough (35 grams) onto the prepared baking sheets.
  • Bake about 10 -14 minutes, or until golden brown around the edges.
  • Cool completely and serve…

Banana Bread

Ingredients:

All purpose flour – 1 3/4 cup
Egg – 2
Ripe Chiquita banana –  3
Chopped Cashew nuts-1 cup  (optional) (you can use walnut,pecan anything you like)
Unsalted Butter – 1/3 cup melted(If you are using salted butter then  leave the 1/4 tsp salt )
Sugar – 3/4 cup
Baking powder – 1 tsp
Baking soda- 1/4 tsp
Pure vanilla extract – 1 tsp
Salt – 1/4 tsp
Ground Cinnamon – 1/2 tsp

Preparation:

  • Preheat the oven to 350 degree f/180 degree c.
  • Butter and flour the bottom and sides of a  loaf pan. Set aside.
  • Melt the butter and keep aside to cool down.
  • Mash the banana with fork or with hand and keep aside.
  • Into a  bowl swift together flour ,baking powder,baking soda,salt,cinnamon,and chopped cashew .
  • Add sugar into it and mix well.
  • In another bowl  lightly beat the eggs .
  • Into that add mashed banana ,vanilla extract,melted butter and mix.
  • Using a wooden spoon or spatula lightly fold the wet ingredients(banana mixture) into the  dry ingredients just until combined and the batter is thick.
  • Do not over mix the batter.You don’t  need the smooth batter.
  • Pour this batter to the prepared loaf pan and bake for 50-60 minute or  bake until bread is golden brown and a  toothpick inserted in the center comes out clean.

 

 

 

 

 

Chocolate Swiss Roll

Ingredients:

Eggs – 6 (room temperature)
Semisweet Chocolate – 120 gm (Chopped)
Sugar – 1/4 cup + 2 tbsp
Vanilla Extract – 1 tsp
Cream of tartar – 3/4 tsp (optional) You can substitute with pinch of salt.

Cranberry Whipped Cream:

Heavy Whipped Cream – 1 cup
Cranberry Sauce(or any other sauce/jam) – 1/3 cup
Sugar – 1 tbsp
Vanilla extract – 1 tsp

Preparation of sponge cake:

  • Preheat oven to 350 degrees F .
  • Butter a sheet pan and line the pan with parchment paper and then butter and flour the paper (or spray with vegetable/flour spray.
  • Melt the chocolate and let cool to room temperature.
  • In a bowl add sugar and egg yolk  and using a electric mixer beat on high speed  until the mixer is thick and fluffy.
  • Add vanilla extract and beat.
  • Add the melted chocolate and beat only to combine and keep aside.
  • In another mixing bowl add the egg whites and beat until foamy.
  • Add the cream of tartar and beat until soft peaks form.
  • Gradually add the 2 tbsp sugar and beat until stiff peak form.

  • Gently fold a small amount of the egg whites into the egg yolk mixture and gently mix.
  • Fold in the remaining whites just until incorporated.  (Don’t over mix)
  • Spread the batter evenly into the prepared pan with the spatula.
  • Bake them for 15 – 17 minute or until until the cake is puffed and springs back when gently pressed.
  • Remove from oven and place on wire rack to cool.

Cranberry Whipped Cream:

  • In a bowl add whipping cream, vanilla extract, and sugar and beat until soft peaks form.(Make sure your bowl and whisk attachment are cool)
  • Add the jam and beat just until stiff peaks form.
  • Once the cake has cooled, spread with the whipped cream and gently roll the cake, peeling off the parchment paper as you roll. (Be patient while rolling the cake it have a tendency to break)
  • Cut the roll and enjoy..

Pineapple Upside Down Cake

Ingredients:

For Topping:

Unsalted Butter – 1/4 cup
Light brown sugar – 3/4 cup
Pineapple sliced -1/4 inch thick pieces
Cherries – few

For Cake Batter :

All purpose flour – 1 1/2 cup
Baking powder – 2  tsp
Salt – 1/4 tsp
Unsalted butter  – 1/2 cup (Room temperature)
Granulated white sugar – 1 cup
Pure vanilla extract – 1 tsp
Eggs – 2 (white and yoke separated)
Milk – 1/2 cup

Preparation:

  • Preheat oven to 350 degrees F.
  • Butter  a  round cake pan  and keep aside.

Topping:

  • Place the butter and brown sugar in a small saucepan and stir over medium heat until the butter has melted and the sugar has dissolved.
  • Continue cooking, without stirring, for a few more minutes or until bubbles just start to appear around the outside edges of the mixture.
  • Then remove from heat, and pour into your prepared cake pan.
  • Evenly arrange the fresh pineapple slices on top of the sugar mixture( i garnished with cherries also).

Cake Batter:

  • In a large bowl  whisk together the flour, baking powder, salt and keep aside.
  • With a electric mixer beat the butter and sugar until light and fluffy.
  • Add vanilla extract into it and mix.
  • Add the egg yolks  one at a time, beating well after each addition.
  • Add the flour mixture (in three additions), alternately with the milk (in two additions), ending with the dry ingredients.
  • In a bowl  whisk the egg whites just until the whites hold a firm peak.
  • With a large spatula gently fold the beaten egg whites into the cake batter in two additions.(don’t over mix)
  • Pour the batter into the cake pan, smoothing the top.
  • Bake in preheated oven for 45 -55 minutes until a toothpick inserted into the cake  will come out clean.
