Coconut Cookies

Ingredients:

All purpose flour – 1 1/4 cup
Coconut flakes – 1 1/4 cup
Brown sugar – 1/2 cup
Sugar – 1/2 cup
Egg – 1 (room temperature)
Unsalted Butter – 1/2 cup ( room temperature)
Baking soda – 1/2 tsp
Vanilla extract – 1/2 tsp
Salt – 1/4 tsp

Method:

  • Preheat oven to 350 degrees.
  • In a  bowl add  flour, baking soda, salt and  mix everything together.
  • Using a mixer cream the butter, brown sugar, and white sugar until smooth.
  • Add the egg ,vanilla and beat until light and fluffy.
  • Gradually add  the flour mixture and the coconut.
  • Drop dough by teaspoonfuls onto an parchment lined cookie sheet. 
  • Bake for 10 to 12 minutes in the preheated oven.
  • Serve coconut cookies with cold milk….

 

 

Fried Potato Balls

Ingredients:

Potato – 2 large (boiled and grated without lumps)
All purpose flour – 1/2 cup
Baking powder – 3/4 tsp
Egg – 1
Black Pepper – 1 tsp
Milk – 5 tbsp
Onion – 1 small chopped (optional)
Green chillies – 3 chopped (optional)
Coriander leaves – few chopped (optional)
Salt – As required
Oil – For deep frying

Preparation:

  • Mix all ingredients together except oil.(this will be little watery)
  • Heat oil in a deep pan .
  • Using a spoon take the dough ad dip it in oil.
  • Fry them until they are golden brown color.
  • Serve this  fried potato balls hot with tomato ketchup.

Nulli Puttu (wayanad Recipe)

Ingredients:

Ripe Banana(Cheru pazham) – 5
Rice flour (Puttu podi) – 1/2 cup
Turmeric powder – 1/4 tsp
Sugar – If needed (optional)
Oil – For deep frying

Method:

  • Mash banana very well  with hand .
  • Add puttu podi and sugar  into this and mix well with hand.
  • Heat oil in a kadai.
  • Take small amount of this mixture and make a small ball and put into hot oil and deep fry them.
  • Repeat the same with all banana mixture.
  • Drain them in paper towel .
  • Nulli puttu is ready to serve.

 

 

 

 

 

Pizza Balls

Ingredients:

Pizza Dough  – 1 Pack (room temperature)
Mozzarella Cheese – 1 cup (shredded)
Onion – Sliced (1/2 of 1 onion )
Chicken (cooked) – 1/2 Cup (Shredded)
Potato – 1 (boiled and mashed)
Turmeric powder – 1/4 tsp
Chilli powder – 1/ 4 tsp
Green chillies – 3 (Chopped)
Ginger – 1/2 piece (chopped)
Garlic – 2 cloves (chopped)
Garam Masala – 1/4 tsp
Salt – as needed
Oil – As requiired
Method:

  • Preheat oven to 425 deg F.
  • In a pan heat oil and add sliced onion,ginger ,garlic,green chillies  and saute until the onions become soft.
  • Add the turmeric powder,red chilli powder,salt,garam masala and saute for 1 minute.
  • Now add the shredded chicken and mashed potatoes into it and mix well.
  • Check for salt if needed add at this stage.
  • Turn off  heat.
  • Roll the pizza dough and make a square shape.
  • Cut into 12 to 16 equal parts.
  • In a bowl add the cooked masala and cheese and mix well.
  • Take one piece of dough and stretch it with hand and fill them with 1 spoon of masala and close it make a ball.
  • Take a pie plate and grease them with oil.
  • Place the pizza balls and brush them with olive oil.
  • Bake them around 20-25 minutes or until they are done.
  • Take out and serve.

Note:

  • You can make your favorite willing for this.
  • You can use 1/2 cup of pizza sauce ,1 cup mozzarella cheese,brocoli  mix them .
  • You can fill the pizza dough with this filling and bake it.

Kona vada

Ingredients:

Rava/semolina –  1 cup
Rice powder – 1 cup
Coconut grated – 1/2 cup
Green chillies – 5,6
Asafoetida – 1/4 tsp
Cummin seeds – 1/2 tsp
Salt – to taste
Oil – for deep frying

Method:

  • Make rava/semolina  into fine powder.
  • Mix powdered rava, rice powder, asafoetida, salt together.
  • Grind coconut, green chillies, cumin seeds by adding little water.
  • Add this grounded coconut into it.
  • Mix well by adding water little by little till it become like chappathi dough.
  • Take small portion off the dough and make thin rope and seal it.
  • Heat oil in a kadai and deep fry the vadas.
  • Serve Hot with tea

 

 

 

 

Sweet Corn And Chicken Fritters

Sweet Corn
Ingredients:

Sweet corn – 3/4 cup
Chicken – 1/2 cup (cooked and shredded)
Spinach – 1/2 cup (Chopped)
Egg – 1
All purpose flour/Maida – 1/2 cup
Red chilli powder – 1/2 tsp
Turmeric powder – 1/4 tsp
Garam masala – 1/4 tsp
Pepper powder – 1/2 tsp
Salt – As needed
Oil – 2 tbsp or more for frying

Method:

  • Mix all ingredients together except oil.
  • Make small patties and shallow fry them (Like frying fish).
  • Fry each side for 3 – 4 minutes.

Butter Cake

Ingredients:

All purpose flour – 3/4 cup
Unsalted Butter – 125 gm
Milk – 2 tbsp
Eggs – 2
Sugar – 1/2 cup
Vanilla extract – 1 tsp
Baking powder – 1 tsp
Salt – 1/4 tsp

Method:

  • Preheat oven to 350 deg F.
  • Butter or line with a parchment/butter paper the tray and keep aside.
  • Beat butter and sugar until pale and creamy.
  • In another bowl sift together flour,salt and baking powder.
  • Add one egg at a time to the butter and sugar mixer and beat well in each addition.
  • Add vanilla extract and mix well.
  • Add flour and milk in 2 or 3 addition and mix well (Use spatula for this).
  • Pour the batter into the prepared pan and bake it for 30-35 minute or until a tooth pick inserted come out clean.
  • Let it cool down for 15-20 minute before serving.
  • Your Butter cake is now ready…

 

Potato Tots Recipe

Ingredients:

Potato  – 2
Green Onion – 1 Tbsp Chopped
Salt & Pepper – To Taste
Bread Crumbs – 2 Cup (i used Panko bread crumbs)
Oil – For deep frying

Preparation:

  • Boil potato 85-90 % and mash them.
  • Into the boiled potato add chopped green onion,salt and pepper.
  • Using potato make the desire shape you want.
  • Place bread crumbs in a medium bowl, then roll potato balls through bread crumbs to coat, shaking off any excess; transfer to tray.
  • Pour oil into a deep skillet to a depth of 1/2 inch, then heat over medium-high heat.
  • Fry potato balls, turning occasionally, until deep golden brown.
  • Transfer to a paper towel to let drain.
  • Your potato tots are ready to serve.

Bullseye Sandwich Recipe

Ingredients:

Bread Slice – 2 Piece
Egg – 1
Pepper powder – 1/2 Tsp
Salt – According to taste
Butter – 2 Tsp

Preparation:

  •  Add butter and make one egg bulls eye sprinkle  salt and pepper    powder on top of egg.
  •  Turn the egg other side and keep one slice of bread on top of it.
  •  Then turn it other side with bread and keep other slice of bread on top of it.
  •  When both side become toasted take from stove.
  •  Your Bullseye sandwich is ready to eat.
